Mini Quiches Elegant Easy Bites

Ingredients
  

  • 2 packages 14.1 oz each refrigerated pie crusts
  • 8 large eggs
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup shredded Gruyere or Swiss cheese
  • 1/2 cup cooked crumbled bacon (about 6 slices)
  • 1/2 cup diced ham
  • 1/4 cup finely chopped green onions
  • Cooking spray

Method
 

  1. Preheat oven to 375°F. Spray two 12-cup muffin tins with cooking spray.
  2. Unroll the pie crusts and use a 3-inch round cookie cutter to cut out 24 circles. Gently press each circle into a muffin cup, creating little pastry shells.
  3. In a large mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
  4. Divide the bacon, ham, and green onions evenly among the pastry cups—about a tablespoon of filling in each.
  5. Sprinkle cheese over the fillings, using about 2 teaspoons per cup.
  6. Carefully pour the egg mixture into each cup, filling about 3/4 full (they'll puff up while baking).
  7. Bake for 20-22 minutes until the tops are golden and the eggs are set. A toothpick inserted in the center should come out clean.
  8. Let cool for 5 minutes in the pan, then carefully remove. Serve warm, or refrigerate for up to 3 days. To reheat, pop them in a 300°F oven for 8-10 minutes on Christmas morning.
