Ingredients

  • 3 cups cubed leftover turkey
  • 2 tablespoons butter
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tablespoons mild curry powder
  • 1 teaspoon ground ginger
  • 1 can 14 oz coconut milk
  • 1 cup chicken broth
  • 1 cup frozen peas
  • 1 large carrot diced
  • 1 tablespoon honey
  • Salt to taste
  • Cooked rice for serving

Method

  1. Melt butter in a large pot or deep skillet over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
  2. Add garlic, curry powder, and ginger. Stir constantly for about 1 minute until fragrant (this is when your kitchen starts smelling amazing!).
  3. Pour in the coconut milk and chicken broth, stirring to combine. Add the diced carrot and bring to a gentle simmer.
  4. Let simmer for 10 minutes until the carrots are tender. Stir in the turkey, peas, and honey.
  5. Cook for another 5 minutes until everything is heated through. Taste and add salt as needed.
  6. Serve over fluffy rice and garnish with fresh cilantro if you have picky eaters who'll allow it!
