Mediterranean Turkey Meatballs with Hummus

These are fresh, herby, and full of flavor without feeling heavy. Serve them over a smear of hummus with a drizzle of olive oil and they look absolutely stunning on a platter. This is the recipe that makes you look like you have your life completely together.

Ingredients
  

  • 1.5 lbs ground turkey
  • 1/3 cup breadcrumbs
  • 1 egg
  • 3 cloves garlic minced
  • 1/4 cup fresh mint chopped
  • 1/4 cup fresh parsley chopped
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 cup store-bought hummus
  • Olive oil paprika, and fresh herbs for serving

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Mix ground turkey, breadcrumbs, egg, garlic, mint, parsley, cumin, coriander, and salt until combined.
  3. Roll into 1.5-inch balls and place on prepared sheet.
  4. Brush lightly with olive oil and bake for 18-20 minutes until golden.
  5. Spread hummus on a large serving platter, arrange meatballs on top, and drizzle with olive oil.
  6. Sprinkle with paprika and fresh herbs before serving.
