Mediterranean Orzo Pasta Salad

Orzo pasta salad is lighter and a little more interesting than your average pasta salad. The feta, cucumbers, and kalamata olives give it a bright, fresh flavor that works as a side dish or a quick lunch. It's the kind of thing that makes you feel like you have your life together.

Ingredients
  

  • 2 cups dry orzo pasta cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup kalamata olives halved
  • 1/2 cup roasted red peppers chopped
  • 1/2 red onion finely diced
  • 1 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh mint or parsley for garnish

Method
 

  1. Cook orzo according to package directions. Drain, rinse under cold water, and spread on a baking sheet to cool quickly.
  2. In a large bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Add cooled orzo, cherry tomatoes, cucumber, olives, roasted red peppers, and red onion. Toss to combine.
  4. Fold in crumbled feta gently so it doesn't all break apart.
  5. Refrigerate at least 30 minutes before serving. Top with fresh mint or parsley.
