Mediterranean Hummus Pasta Salad

Ingredients
  

  • 3 cups cooked pasta rotini or bowtie work great
  • 1 cup hummus your favorite flavor
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/2 cup Kalamata olives sliced
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Cook your pasta according to package directions. Drain and rinse under cold water to stop the cooking process.
  2. Set aside.
  3. In a large mixing bowl, combine the cooked pasta with hummus, making sure the pasta is thoroughly coated.
  4. Add the cherry tomatoes, cucumber, red onion, and Kalamata olives to the bowl. Mix well to combine.
  5. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  6. Pour the dressing over the pasta salad and toss to coat everything evenly.
  7. Sprinkle the crumbled feta cheese on top.
  8. Chill in the fridge for at least 30 minutes to let the flavors meld together.
  9. Serve cold and enjoy! Perfect as a side dish or a light meal on its own.

Notes

For extra protein, add some grilled chicken or chickpeas. This salad keeps well in the fridge for up to 3 days. Make it ahead for meal prep! You can customize the veggies to your liking – add some bell peppers, spinach, or even artichoke hearts!
