Marble Cookies and Cream Cheesecake

Ingredients
  

  • 24 chocolate sandwich cookies crushed
  • 5 tbsp butter melted
  • 32 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
  • 8 chocolate sandwich cookies chopped

Method
 

  1. Heat oven to 325F and press the cookie crust into a springform pan.
  2. Beat cream cheese and sugar smooth, then add eggs, vanilla, and chopped cookies.
  3. Scoop out a third of the batter and whisk in the cocoa powder.
  4. Spoon vanilla and chocolate batters over the crust in alternating dollops, then swirl with a knife.
  5. Bake about 65 minutes until just set.
  6. Cool, then chill at least 6 hours so the marble holds its shape.

Notes

Use a clean knife and gentle figure-eights for the prettiest marbling.
