Maple Walnut Cheesecake

Smooth cheesecake sweetened with maple, then topped with candied walnuts and drizzled with maple syrup.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 32 oz cream cheese softened
  • 3/4 cup granulated sugar
  • 1/2 cup maple syrup
  • 4 eggs room temperature
  • 1/2 cup sour cream
  • 1 cup walnuts chopped
  • 3 tbsp maple syrup for topping

Method
 

  1. Heat oven to 325F. Press crumbs and butter into a springform pan, bake 10 minutes, and cool.
  2. Beat cream cheese and sugar smooth, then blend in 1/2 cup maple syrup.
  3. Add eggs one at a time, mix in sour cream, and pour over the crust.
  4. Bake 65 to 75 minutes until just set, cool in the cracked oven 1 hour, then chill 6 hours.
  5. Toss walnuts with 3 tbsp maple syrup, toast briefly, cool, and pile onto the cheesecake before serving.

Notes

Use real maple syrup, not pancake syrup, for the deepest flavor.
