Maple Mustard Glazed Scallops

Ingredients
  

  • 1.5 lb sea scallops patted dry
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tbsp whole grain mustard
  • 1 tsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Pat the scallops very dry and season with salt and pepper.
  2. Heat the butter and olive oil in a skillet over medium-high until foaming.
  3. Sear the scallops 2 minutes per side until a deep golden crust forms, then remove to a plate.
  4. Lower the heat, add maple syrup, mustard, and lemon juice, and simmer 1 minute until glossy.
  5. Return the scallops to the pan and toss gently to coat in the glaze.
  6. Serve right away while the crust is still crisp.

Notes

Bone-dry scallops are everything. Moisture is the enemy of a good sear.
