Mango Coconut Chia Pudding

Make this the night before and it's completely done by morning — no cooking, no stress. It's light and refreshing, which is actually perfect for New Year's Day when you might already be feeling a little heavy from the night before.

Ingredients
  

  • 1/2 cup chia seeds
  • 2 cups full-fat coconut milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 ripe mangoes peeled and diced
  • Toasted coconut flakes for topping
  • Lime zest for garnish

Method
 

  1. Whisk chia seeds, coconut milk, maple syrup, and vanilla together in a large bowl or pitcher.
  2. Let sit for 15 minutes, then whisk again to break up any clumps. Cover and refrigerate overnight.
  3. In the morning, stir the pudding — it should be thick and creamy. Add a splash of coconut milk if it's too thick.
  4. Spoon into glasses or bowls and top with diced mango, toasted coconut flakes, and lime zest.
