A family-size sausage, egg and potato casserole with a full refrigerator-thaw plan.
Prep Time 15 minutes
Cook Time 1 hour 5 minutes
Resting 10 minutes
Total Time 1 hour 30 minutes
Servings: 10 servings

Ingredients

  • 30 oz frozen shredded hash browns thawed in refrigerator, squeezed dry
  • 1 lb fully cooked breakfast sausage crumbles chilled
  • 10 large eggs
  • 1 1/2 cups whole milk
  • 2 cups shredded cheddar divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon butter for pan

Method

  1. Butter a deep 9x13-inch freezer-safe metal pan. Whisk eggs, milk, garlic powder and pepper; fold in thawed dry potatoes, cooked chilled sausage and 1 1/2 cups cheddar. Spread in pan and top with remaining cheese.
  2. To bake now, heat oven to 350°F. Cover with foil and bake 30 minutes, then uncover and bake 25–35 minutes until center is set and 165°F. Rest 10 minutes.
  3. To freeze instead, cover the unbaked pan airtight immediately, label and freeze for up to 2 months. Thaw fully in refrigerator for 24–48 hours before baking. Bake covered at 350°F for 40 minutes, then uncovered 25–35 minutes, until 165°F in center; allow more time if needed.

Notes

Equipment: 9x13-inch baking dish, large skillet, large mixing bowl, instant-read thermometer.
Serving size: 1/10 of the recipe.
Displayed time is for baking a freshly assembled casserole; freezing and 24–48 hours refrigerator thawing are additional. A frozen solid casserole cannot be made ready with just a few added minutes.
For breakfasts later in the week, refrigerate only the portions you will eat within 3–4 days. Freeze the rest promptly after chilling, wrapped individually, for up to 2 months. Thaw in the refrigerator overnight; reheat covered in a 350°F oven or microwave in intervals until the center reaches 165°F.
Refrigerate leftovers in shallow containers within 2 hours (1 hour above 90°F); use within 3–4 days. Reheat the center to 165°F.
