Make-Ahead Banana Chocolate Chip Mini Muffins

Bake these before the holiday and freeze them in a zip-lock bag. Pull them out the night before New Year's and they're perfect by morning. Mini muffins are the exact right size for kids to grab without needing a plate.

Ingredients
  

  • 3 ripe bananas mashed
  • 1/3 cup unsalted butter melted
  • 3/4 cup sugar
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1 cup mini chocolate chips

Method
 

  1. Preheat oven to 350°F. Grease a 24-cup mini muffin tin.
  2. Stir melted butter into mashed bananas. Mix in sugar, egg, and vanilla.
  3. Add baking soda and salt, then fold in flour until just combined. Stir in chocolate chips.
  4. Fill each mini muffin cup about 3/4 full.
  5. Bake for 11 to 13 minutes until a toothpick inserted comes out clean. Cool completely before freezing.
  6. To freeze: place cooled muffins in a zip-lock bag with the air pressed out. Freeze up to 2 months. Thaw overnight at room temperature.
