Ingredients

  • 8 slices bacon chopped
  • 1/4 cup unsalted butter
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 5 large russet potatoes peeled and diced into 1/2-inch cubes
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Chopped green onions extra cheese, and sour cream for topping

Method

  1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy, about 6-8 minutes. Remove with a slotted spoon and set aside on paper towels, leaving about 2 tablespoons of bacon grease in the pot.
  2. Add the butter to the pot with the bacon grease. Once melted, add the diced onion and cook for 4-5 minutes until softened. Add the minced garlic and cook for another minute.
  3. Sprinkle the flour over the onion mixture and stir constantly for 2-3 minutes to create a roux, making sure it doesn't brown.
  4. Gradually whisk in the chicken broth, stirring constantly to prevent lumps. Add the milk and bring to a gentle simmer.
  5. Add the diced potatoes, salt, pepper, and garlic powder. Simmer for 20-25 minutes, stirring occasionally, until the potatoes are fork-tender.
  6. Using a potato masher, partially mash some of the potatoes right in the pot to thicken the soup (leave plenty of chunks for texture).
  7. Stir in the heavy cream, shredded cheddar cheese, and sour cream. Cook on low heat, stirring frequently, until the cheese is melted and everything is well combined, about 3-5 minutes.
  8. Taste and adjust seasonings as needed. Ladle into bowls and top with crispy bacon, extra shredded cheese, sour cream, and chopped green onions. Enjoy the comfort!
