Loaded Tater Tot Skewers

Crispy tater tots interspersed with bacon and cheese, served on skewers and dipped in a quick sour cream and chive dip!

Ingredients
  

  • 1 32 oz bag frozen tater tots
  • 6 slices bacon cut in thirds
  • 6 oz cheddar cheese cut into small cubes
  • 1/2 cup sour cream
  • 2 tbsp chives chopped
  • 1 tbsp milk
  • 1/4 tsp garlic powder
  • wooden skewers

Method
 

  1. Bake the tater tots according to package directions until deeply golden and crisp, about 25 minutes, flipping halfway.
  2. Meanwhile, cook the bacon pieces in a skillet until crisp, then drain on paper towels.
  3. Stir together the sour cream, chives, milk, and garlic powder to make the dip and chill.
  4. Thread each skewer alternating tots, bacon, and cheese cubes, leaving a handle at the bottom.
  5. Arrange the skewers on a platter with the dip in the center and serve while the tots are still warm.

Notes

Soak wooden skewers in water for 10 minutes if you want to broil them for an extra minute to melt the cheese.
