Loaded Potato and Kale Soup

Potatoes and kale combined with a creamier and lighter broth.

Ingredients
  

  • 4 potatoes cubed
  • 4 cups chopped kale
  • 1 onion diced
  • 5 cups chicken broth
  • 1/2 cup evaporated skim milk
  • 3 slices turkey bacon chopped
  • 1 clove garlic minced

Method
 

  1. Crisp the turkey bacon in a pot, then set some aside for topping.
  2. Cook the onion and garlic in the same pot until soft.
  3. Add the potatoes and broth and simmer for 20 minutes until tender.
  4. Lightly mash some of the potatoes, then stir in the kale and milk.
  5. Simmer until the kale wilts and top with the reserved bacon.

Notes

Mashing some potatoes thickens the soup without any added cream.
