Loaded Chicken Baked Potatoes

Baked potatoes full of rotisserie chicken, cheese, bacon, and sour cream.

Ingredients
  

  • 4 russet potatoes
  • 2 cups rotisserie chicken shredded
  • 1 1/2 cups cheddar cheese shredded
  • 1/2 cup bacon bits
  • 1/2 cup sour cream
  • 3 green onions sliced

Method
 

  1. Heat oven to 400F. Pierce the potatoes and bake 55 to 60 minutes until tender.
  2. Warm the shredded chicken in a skillet or microwave.
  3. Split each potato open and fluff the insides with a fork.
  4. Stuff with chicken and cheese and return to the oven until the cheese melts.
  5. Top with bacon, sour cream, and green onions and serve.

Notes

Microwave the potatoes for 10 minutes first to speed things up.
