Loaded Baked Potato Casserole

Hearty casserole of tender baked potatoes, bacon, cheese, and sour cream until all the goodness is bubbly.

Cook Time 40 minutes
Total Time 55 minutes
Servings: 8 servings

Ingredients
  

  • 3 lbs russet potatoes cubed
  • 1 cup sour cream
  • 2 cups cheddar cheese shredded
  • 6 slices bacon cooked and crumbled
  • 4 tbsp butter melted
  • 3 stalks green onion sliced
  • 1 tsp salt

Method
 

  1. Boil the cubed potatoes for about 12 minutes until just tender, then drain.
  2. Toss the potatoes with the melted butter, sour cream, salt, and half the cheese.
  3. Spread in a greased baking dish and top with the remaining cheese and bacon.
  4. Bake at 375F for 25 minutes until bubbly and golden.
  5. Scatter the green onions over the top before serving.

Notes

Swap in turkey bacon if you want it a little lighter.
