Lentil Soup

Ingredients
  

  • 2 cups dried green or brown lentils rinsed
  • 6 cups low-sodium vegetable or chicken broth
  • 1 can 14.5 oz diced tomatoes
  • 3 medium carrots peeled and diced
  • 3 celery stalks diced
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach roughly chopped

Method
 

  1. Combine the lentils, broth, diced tomatoes, carrots, celery, onion, and garlic in the slow cooker.
  2. Add the cumin, thyme, bay leaf, salt, and black pepper, stirring everything together.
  3. Cover and cook on low for 8 hours or on high for 4-5 hours until the lentils are tender and the vegetables are soft.
  4. Remove the bay leaf and stir in the fresh spinach during the last 15 minutes of cooking until wilted.
  5. Taste and adjust seasoning with additional salt and pepper if needed before serving.
