Lemon Zest Cookies and Cream Cheesecake

Ingredients
  

  • 24 chocolate sandwich cookies crushed
  • 5 tbsp butter melted
  • 32 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs
  • 3 tbsp lemon zest
  • 2 tbsp lemon juice
  • 8 chocolate sandwich cookies chopped

Method
 

  1. Heat oven to 325F. Press cookie crust into springform pan.
  2. Beat cream cheese and sugar smooth; add eggs individually.
  3. Mix in lemon zest and juice; fold in chopped cookies.
  4. Pour over crust; smooth top.
  5. Bake about 60 minutes until just set.
  6. Cool; chill at least 6 hours before slicing.

Notes

Zest the lemons before juicing, it's so much easier that way.
