Lemon Icebox Cake

Graham crackers layered with bright lemon cream create a sliceable cake.

Ingredients
  

  • 2 cups heavy cream
  • 14 oz sweetened condensed milk
  • 0.5 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 box graham crackers

Method
 

  1. Whip the heavy cream to stiff peaks, then fold in the condensed milk, lemon juice, and zest.
  2. Spread a thin layer of the lemon cream in the bottom of a 9x13 dish.
  3. Layer graham crackers and lemon cream, repeating until you finish with cream on top.
  4. Cover and chill at least 6 hours or overnight so the crackers soften, then slice.

Notes

Overnight chilling is key for that perfect cake-like texture.
