Lemon Herb Grilled Chicken

Chicken breasts that have been grilled and marinated with lemon, garlic, and fresh herbs make a bright and zesty dinner that reheats perfectly!

Ingredients
  

  • 1.5 lb boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 1 lemon juiced and zested
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Whisk olive oil, lemon juice and zest, garlic, parsley, oregano, salt, and pepper in a bowl.
  2. Add the chicken, toss to coat, and let it marinate at least 20 minutes (or overnight).
  3. Heat a grill or grill pan over medium-high.
  4. Grill the chicken 5-6 minutes per side until cooked through and 165F at the center.
  5. Rest 5 minutes, then slice and divide into meal-prep containers.

Notes

Let it rest before slicing so the juices stay in the chicken, not on the cutting board.
