Lemon Herb Baked Cod

Cod fillets placed on a baking sheet covered in lemon, garlic, and herbs which melt in your mouth and fall apart when touched with a fork.

Ingredients
  

  • 4 cod fillets about 6 oz each
  • 3 tbsp butter melted
  • 2 cloves garlic minced
  • 1 lemon zested and juiced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat the oven to 400 degrees F and lightly grease a baking dish.
  2. Pat the cod fillets dry and lay them in the dish.
  3. Whisk together melted butter, garlic, lemon zest, lemon juice, salt, and pepper, then spoon it over the fish.
  4. Scatter the parsley and dill across the top.
  5. Bake for 16 to 18 minutes, until the cod is opaque and flakes easily.
  6. Spoon the pan juices back over the fillets before serving.

Notes

Don't overbake. The cod keeps cooking a little once you pull it out.
