Lemon Blueberry Waffles

These feel a little bright and celebratory for New Year's morning, which is exactly the vibe you want. The lemon zest and blueberries together are genuinely really good. Use a waffle mix if you want — zero judgment.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 3/4 cups whole milk
  • 2 large eggs separated
  • 5 tbsp unsalted butter melted
  • Zest of 1 lemon
  • 1 cup fresh or frozen blueberries
  • Maple syrup and whipped cream for serving

Method
 

  1. Preheat your waffle iron. Whisk flour, sugar, baking powder, and salt in a large bowl.
  2. In a separate bowl mix milk, egg yolks, melted butter, and lemon zest. In another bowl, beat egg whites to stiff peaks.
  3. Stir wet ingredients into dry until just combined. Gently fold in the beaten egg whites, then fold in blueberries.
  4. Spray waffle iron with cooking spray. Pour batter in and cook according to your iron's settings until waffles are golden and crisp.
  5. Serve immediately with maple syrup and a dollop of whipped cream.
