Lebkuchen

Honey-sweetened spiced cookies with a touch of citrus and a glossy sugar glaze.

Ingredients
  

  • 1/2 cup honey
  • 1/3 cup brown sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground allspice
  • 1 lemon zested
  • 1 cup powdered sugar for glaze
  • 2 tbsp water

Method
 

  1. Warm the honey and brown sugar in a saucepan until smooth, then cool slightly and whisk in the egg.
  2. Stir together the flour, baking powder, spices, and lemon zest, then mix into the honey mixture to form a soft dough.
  3. Chill the dough for 20 minutes, then roll into balls and flatten slightly on a lined sheet.
  4. Bake at 350F for 12-15 minutes until just set and lightly browned.
  5. Whisk the powdered sugar with water and brush over the warm cookies for that classic shine.

Notes

Let the glaze set fully before stacking so they stay glossy.
