Lasagna with Spinach and Ricotta

Spinach, ricotta, and marinara make this creamy vegetarian lasagna an incredible meal!

Ingredients
  

  • 12 lasagna noodles cooked
  • 2 cups ricotta cheese
  • 10 oz frozen spinach thawed and squeezed dry
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella
  • 0.5 cup grated Parmesan
  • 1 egg
  • 2 cloves garlic minced
  • 0.5 tsp salt

Method
 

  1. Preheat the oven to 375 degrees F.
  2. Mix the ricotta, spinach, egg, garlic, salt, and half the Parmesan in a bowl.
  3. Spread a thin layer of marinara in a baking dish, then layer noodles, ricotta mixture, marinara, and mozzarella.
  4. Repeat the layers, finishing with marinara, mozzarella, and the remaining Parmesan.
  5. Cover with foil and bake 30 minutes, then uncover and bake 15 minutes more until golden and bubbling.
  6. Let it rest 15 minutes before slicing so the layers hold.

Notes

Resting before you cut is what keeps those neat layers from sliding apart.
