Ingredients

  • 12 lasagna noodles
  • 15 oz part-skim ricotta cheese
  • 1 cup part-skim mozzarella cheese shredded (divided)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 10 oz frozen chopped spinach thawed and squeezed dry
  • 2 cups marinara sauce low-sugar variety
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Method

  1. Preheat oven to 375°F. Cook lasagna noodles according to package directions until al dente. Drain and lay flat on a clean kitchen towel to prevent sticking.
  2. In a medium bowl, combine ricotta cheese, 1/2 cup mozzarella, Parmesan, egg, spinach, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish.
  4. Lay each lasagna noodle flat and spread about 3 tablespoons of the cheese mixture evenly over each noodle. Roll up gently from one end to the other.
  5. Place roll-ups seam-side down in the prepared baking dish. Pour remaining 1 cup of marinara sauce over the top.
  6. Sprinkle remaining 1/2 cup mozzarella cheese over the roll-ups. Cover with foil and bake for 25 minutes.
  7. Remove foil and bake for an additional 5 minutes until cheese is melted and bubbly. Garnish with fresh basil before serving.
