Lasagna Fritta

Ingredients
  

  • 1 package 9 oz lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups all-purpose flour
  • 3 large eggs beaten
  • 2 cups Italian breadcrumbs
  • Vegetable oil for frying
  • 2 cups marinara sauce for serving
  • Fresh basil for garnish

Method
 

  1. Cook lasagna noodles according to package directions until al dente, then drain and lay flat on a baking sheet to cool.
  2. In a medium bowl, combine ricotta, mozzarella, Parmesan, 1 egg, Italian seasoning, garlic powder, salt, and pepper, mixing until well blended.
  3. Cut each lasagna noodle into thirds, then place about 2 tablespoons of cheese filling on each piece and fold over to create a small packet, pressing edges to seal.
  4. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  5. Dredge each lasagna packet in flour, then dip in egg, and finally coat with breadcrumbs, pressing gently to adhere.
  6. Heat 2 inches of vegetable oil in a large heavy-bottomed pot to 350°F.
  7. Fry the lasagna packets in batches for 3-4 minutes per side until golden brown and crispy, being careful not to crowd the pan.
  8. Drain on paper towels and serve immediately with warm marinara sauce and fresh basil.
