Method
- Heat 1 tablespoon oil in a skillet and stir-fry the chopped kimchi for 3 minutes.
- Stir in the gochujang and kimchi juice and cook 1 minute.
- Add the cold rice and toss until heated through and slightly crisp.
- In a separate pan, fry the eggs in the remaining oil until the edges are crisp and the yolks runny.
- Divide the rice into bowls, top each with a fried egg, and sprinkle with green onions and sesame seeds.
Notes
Older, well-fermented kimchi gives the best tangy flavor.
