Kid-Friendly Turkey Noodle Casserole

Ingredients
  

  • 12 oz wide egg noodles
  • 3 cups cooked turkey chopped into bite-sized pieces
  • 1 can 10.5 oz cream of chicken soup
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup sour cream
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese divided
  • 1 cup frozen peas or mixed vegetables
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed butter crackers like Ritz or panko breadcrumbs
  • 2 tablespoons melted butter

Method
 

  1. Preheat your oven to 350°F and grease a 9x13-inch baking dish with butter or cooking spray.
  2. Cook the egg noodles according to package directions until just al dente (they'll cook more in the oven). Drain and set aside.
  3. In a large mixing bowl, combine both cans of soup, sour cream, milk, 1½ cups of the shredded cheese, garlic powder, onion powder, salt, and pepper. Stir until smooth and well combined.
  4. Add the cooked noodles, turkey, and frozen peas to the bowl. Gently fold everything together until the noodles and turkey are completely coated in the creamy sauce.
  5. Pour the mixture into your prepared baking dish and spread it out evenly.
  6. In a small bowl, mix the crushed crackers (or breadcrumbs) with the melted butter until the crumbs are coated. Sprinkle this over the casserole, then top with the remaining 1/2 cup of cheese.
  7. Bake uncovered for 25-30 minutes until the top is golden brown and the casserole is bubbling around the edges.
  8. Let it cool for about 5 minutes before serving. Watch those little faces light up!
