Key Lime Pie Cheesecake

A tasty and zesty key lime cheesecake on a buttery graham cracker crust and topped with whipped cream and a twist of lime for that traditional pie experience!

Ingredients
  

  • 2 cups graham cracker crumbs
  • 6 tbsp unsalted butter melted
  • 24 oz cream cheese softened
  • 0.8 cup granulated sugar
  • 3 large eggs room temperature
  • 0.5 cup key lime juice
  • 2 tbsp lime zest
  • 0.5 cup sour cream

Method
 

  1. Preheat the oven to 325F and wrap a 9-inch springform pan in foil.
  2. Press the graham crumbs and butter into the pan and bake 10 minutes, then cool.
  3. Beat the cream cheese and sugar smooth, then mix in the key lime juice, zest, and sour cream.
  4. Add the eggs one at a time on low speed, then pour over the crust.
  5. Bake in a water bath 50 to 55 minutes until the center is just set, then cool an hour in the cracked oven.
  6. Refrigerate at least 6 hours.
  7. Top with whipped cream and lime zest before serving.

Notes

Bottled key lime juice works great here when fresh key limes are hard to find.
