Jerk Chicken with Mango Salsa

Tender, jerk-seasoned chicken topped with fresh mango salsa for a tropical twist!

Ingredients
  

  • 1.5 lb boneless skinless chicken thighs
  • 2 tbsp jerk seasoning
  • 1 mango diced
  • 0.5 red onion diced
  • 0.5 red bell pepper diced
  • 1 lime juiced
  • 2 tbsp fresh cilantro chopped
  • 2 tbsp olive oil

Method
 

  1. Rub the chicken with jerk seasoning and olive oil.
  2. Sear over medium-high, 5-6 minutes per side, until cooked through with a little char.
  3. Toss mango, red onion, bell pepper, lime juice, and cilantro for the salsa.
  4. Slice the chicken and top with mango salsa.
  5. Divide into containers, keeping salsa slightly separate to stay fresh.

Notes

Make extra salsa; it disappears fast and brightens leftovers all week.
