Italian Sausage Sheet Pan Dinner

Ingredients
  

  • 1 pound Italian sausage mild or spicy, cut into 2-inch pieces
  • 2 medium bell peppers red and yellow, cut into strips
  • 1 large red onion cut into wedges
  • 2 medium zucchini sliced into half-moons
  • 1 pint cherry tomatoes
  • 3 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes optional
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving

Method
 

  1. Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. In a large bowl, toss together bell peppers, onion, zucchini, and sausage pieces with olive oil, Italian seasoning, garlic powder, salt, and red pepper flakes if using.
  3. Spread everything evenly on the sheet pan in a single layer, making sure not to overcrowd.
  4. Roast for 20 minutes, stirring once halfway through.
  5. Add cherry tomatoes to the pan and roast for an additional 5-7 minutes until tomatoes start to blister and sausage is cooked through.
  6. Remove from oven and sprinkle with fresh basil and Parmesan cheese.
  7. Serve over pasta, rice, or with crusty bread to soak up all those delicious juices!
