Italian Herb Chicken

Slow-cooked chicken in a tomato and Italian herb sauce can be used in many ways.

Ingredients
  

  • 2 lbs chicken breasts fully thawed before slow cooking
  • 1.5 cups marinara sauce
  • 1 tbsp Italian seasoning
  • 3 cloves garlic minced
  • 0.25 cup chicken broth
  • 0.25 cup grated parmesan

Method
 

  1. Place the fully thawed chicken in the slow cooker and pour in the broth.
  2. Spoon the marinara over the top and add the Italian seasoning and garlic.
  3. Cover and cook on low for 6 hours until the chicken is tender. Check the thickest chicken pieces with a thermometer and continue only until they reach 165°F and are tender; start checking after 3 hours because thawed breasts may finish before the stated time.
  4. Slice the chicken and spoon the herby tomato sauce over the top.
  5. Sprinkle with parmesan and serve over pasta or with crusty bread.

Notes

Add a slice of mozzarella on top and broil briefly for a chicken parm vibe.
Thaw chicken fully in the refrigerator before beginning. The listed time is a planning estimate; thickness and slow-cooker performance vary.
