Italian Beef and Rice Skillet

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 cup long-grain white rice
  • 1 cup beef broth plus more as needed
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 cup frozen peas and carrots
  • Salt and pepper to taste

Method
 

  1. Brown the ground beef in a large skillet over medium-high heat, then drain the fat well.
  2. Add the onion and garlic and cook until softened.
  3. Stir in the rice, beef broth, diced tomatoes and oregano.
  4. Bring to a simmer, cover and cook on low for 20 minutes without lifting the lid.
  5. Add the frozen peas and carrots in the last 5 minutes of cooking.
  6. Season with salt and pepper and fluff before serving.

Notes

The rice cooks directly in the broth so it absorbs flavor. One cup of rice to one cup of broth is lean on liquid; the canned tomatoes add moisture but add a splash more broth if it sticks. Lifting the lid releases steam and stalls the cooking. Add frozen vegetables at the end so they keep their color and texture. Use an Italian seasoning blend or fresh basil to punch up the flavor.
