Instant Pot Tuscan White Bean Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 3 carrots peeled and diced
  • 3 celery stalks diced
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes
  • 3 cans 15 oz each white beans (cannellini or great northern), drained and rinsed
  • 6 cups chicken broth
  • 1 can 14.5 oz diced tomatoes
  • 4 cups fresh spinach or kale chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Method
 

  1. Set Instant Pot to sauté mode and heat olive oil. Add Italian sausage and cook, breaking it up with a spoon, until browned (about 5 minutes).
  2. Add onion, carrots, and celery. Cook for 3-4 minutes until vegetables start to soften.
  3. Stir in garlic, oregano, basil, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Add white beans, chicken broth, and diced tomatoes with their juice. Stir to combine and scrape up any browned bits from the bottom.
  5. Close the lid, set valve to sealing, and cook on high pressure for 10 minutes.
  6. Quick release the pressure, then open the lid carefully. Set to sauté mode again.
  7. Stir in the fresh spinach or kale and let it wilt for 2-3 minutes. Season with salt and pepper to taste. Serve hot with a generous sprinkle of Parmesan cheese on top.
