Hot Sandwich with Roast Beef

When you're craving something hearty and satisfying, this hot roast beef sandwich hits all the right notes! It's loaded with tender roast beef, caramelized onions, and gooey melted cheese. Perfect for using up leftover roast beef, or grab some from the deli counter—either way, you're in for a treat!

Ingredients
  

  • 1 1/2 pounds thinly sliced roast beef
  • 4 hoagie rolls or French bread rolls
  • 2 large onions thinly sliced
  • 8 slices provolone cheese
  • 1 cup beef broth
  • 3 tablespoons butter divided
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup horseradish mayo or regular mayo
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Melt 2 tablespoons butter in a large skillet over medium heat. Add sliced onions and cook for 12-15 minutes, stirring occasionally, until caramelized and golden brown. Season with salt and pepper, then transfer to a plate.
  2. In the same skillet, combine beef broth, Worcestershire sauce, and garlic powder. Bring to a simmer.
  3. Add the roast beef slices to the broth mixture and heat through for 2-3 minutes, stirring gently to coat all the meat.
  4. Preheat your oven to 400°F. Split the hoagie rolls and butter the outsides with the remaining 1 tablespoon of butter.
  5. Spread horseradish mayo on the inside of each roll. Using tongs, pile the roast beef onto the bottom halves, top with caramelized onions, and add 2 slices of provolone cheese to each sandwich.
  6. Place sandwiches on a baking sheet and bake for 5-7 minutes until the cheese is melted and the bread is toasted. Serve with extra beef broth on the side for dipping!
