Hot Sandwich with Leftover Chicken

Ingredients
  

  • 2 cups shredded or diced cooked chicken
  • 4 hoagie rolls or ciabatta buns split
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 cup sliced tomatoes
  • 1 cup fresh spinach leaves
  • 2 tablespoons butter softened
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the mayonnaise and Dijon mustard. Season the shredded chicken with salt and pepper.
  3. Butter the outside of each hoagie roll. Place them butter-side down on the baking sheet.
  4. Spread the mayo-mustard mixture on the inside of each roll. Layer with spinach leaves, chicken, tomato slices, and top with shredded mozzarella.
  5. Close the sandwiches and bake for 8-10 minutes until the cheese is melted and the bread is golden and crispy.
  6. Let cool for 2 minutes before slicing in half and serving. Enjoy while hot!
