Hot Sandwich with Egg and Cheese

This classic breakfast-for-lunch sandwich is a lifesaver on busy days! Crispy on the outside with gooey melted cheese and a perfectly cooked egg, it's comfort food at its finest. My kids request this at least once a week, and I'm not complaining since it takes less time than waiting in the drive-thru line!

Ingredients
  

  • 2 slices bread white, wheat, or sourdough
  • 2 large eggs
  • 2 slices American or cheddar cheese
  • 2 tablespoons butter divided
  • Salt and pepper to taste
  • Hot sauce optional

Method
 

  1. Heat a large skillet over medium heat and add 1 tablespoon of butter.
  2. Crack the eggs into the skillet and cook to your preference (over-easy, over-medium, or scrambled all work great). Season with salt and pepper.
  3. While eggs are cooking, butter one side of each bread slice with the remaining butter.
  4. Once eggs are done, remove them from the skillet and set aside. Wipe the skillet clean if needed.
  5. Place one slice of bread in the skillet, buttered side down. Top with one slice of cheese, the cooked eggs, the second slice of cheese, and finally the second piece of bread, buttered side up.
  6. Cook for 2-3 minutes until golden brown, then carefully flip and cook another 2-3 minutes until both sides are crispy and the cheese is melted.
  7. Remove from heat, slice in half, and add hot sauce if desired. Serve immediately!
