Hot Cocoa Fudge Cookies

Ingredients
  

  • 1 cup all-purpose flour
  • 0.66 cup cocoa powder
  • 1 tsp baking soda
  • 0.5 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 egg
  • 1 tsp vanilla extract
  • 0.5 cup chocolate chips
  • 20 mini marshmallows

Method
 

  1. Whisk flour, cocoa, baking soda, and a pinch of salt.
  2. Cream butter and brown sugar, then beat in egg and vanilla.
  3. Stir in the dry ingredients and chocolate chips until combined.
  4. Scoop onto lined sheets and bake at 350F for 9 minutes.
  5. Press a marshmallow into each cookie and bake 2 more minutes until just melted.

Notes

Pop them under the broiler for 30 seconds if you want toasty golden marshmallow tops.
