Hoppin' John with Chicken

A delicious one-pot dish of black-eyed peas, rice, chicken, and simmered smoky seasonings.

Ingredients
  

  • 2 cups cooked chicken shredded
  • 2 cans black-eyed peas drained
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 4 slices bacon chopped
  • 1 onion diced
  • 1 tsp smoked paprika

Method
 

  1. Cook the bacon in a pot until crisp, then add the onion and saute until soft.
  2. Stir in the rice, smoked paprika, and broth and bring to a boil.
  3. Reduce the heat, cover, and simmer 15 minutes.
  4. Stir in the black-eyed peas and chicken and cook another 10 minutes.
  5. Season to taste and serve warm.

Notes

Serve with a side of collard greens for the full lucky meal.
