Method
- If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.
- In a small bowl, mix together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper to create the marinade.
- Place the chicken chunks in a large resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken chunks onto the skewers, leaving a little space between each piece for even cooking.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.
- Serve the skewers hot, optionally brushing with additional honey mustard sauce for extra flavor.
Notes
Pair these skewers with a fresh garden salad or some grilled veggies for a complete meal. Leftovers can be used in salads or wraps for quick and easy lunches. If you prefer baking, you can also cook these skewers in a preheated oven at 400°F (200°C) for 15-20 minutes, turning halfway through.
