Honey Mustard Grilled Chicken Skewers

Ingredients
  

  • 1 pound chicken breasts cut into chunks
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Skewers wooden or metal

Method
 

  1. If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.
  2. In a small bowl, mix together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper to create the marinade.
  3. Place the chicken chunks in a large resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken chunks onto the skewers, leaving a little space between each piece for even cooking.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.
  7. Serve the skewers hot, optionally brushing with additional honey mustard sauce for extra flavor.

Notes

Pair these skewers with a fresh garden salad or some grilled veggies for a complete meal. Leftovers can be used in salads or wraps for quick and easy lunches. If you prefer baking, you can also cook these skewers in a preheated oven at 400°F (200°C) for 15-20 minutes, turning halfway through.
