Honey Mustard Chicken Thighs

Ingredients
  

  • 8 boneless skinless chicken thighs
  • 1/3 cup honey
  • 1/4 cup Dijon or yellow mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat the oven to 400 degrees F.
  2. Whisk the honey, mustard, olive oil and garlic together.
  3. Season the thighs and arrange them in a single layer in a baking dish large enough that they are not crowded.
  4. Spoon the honey mustard sauce over the top.
  5. Bake 25 to 30 minutes, until the chicken reaches 165 degrees F, then rest a few minutes before serving.

Notes

Thighs stay juicy because dark meat has more fat. Boneless skinless thighs cook faster than bone-in, so check the internal temperature. The honey mustard sauce can burn before the chicken finishes if the oven runs hot or the dish is too small. Do not overcrowd the pan or they steam instead of caramelize. Dijon gives a sharper tang, yellow mustard is milder and sweeter.
