Honey Mustard Chicken Skewers

Ingredients
  

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • Salt and pepper to taste
  • Skewers if wooden, soak in water for 15-20 minutes

Method
 

  1. In a medium bowl, whisk together the honey, Dijon mustard, olive oil, lemon juice, minced garlic, salt, and pepper.
  2. Add the chicken pieces to the bowl, ensuring each piece is well-coated with the honey mustard marinade. Cover and refrigerate for at least 30 minutes to marinate.
  3. For best results, marinate for up to 2 hours.
  4. Preheat your grill to medium-high heat. If using wooden skewers, make sure they are soaked in water to prevent burning.
  5. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  6. Place the skewers on the preheated grill. Grill for 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  7. During the last few minutes of grilling, brush the skewers with any remaining marinade for extra flavor.
  8. Remove from the grill and let the skewers rest for a few minutes before serving.
  9. Garnish with fresh parsley or lemon wedges for extra zest. Enjoy!

Notes

These skewers are perfect as an appetizer or as a main dish served with a side salad or rice. You can also bake these in the oven if a grill is not available - bake at 400°F (200°C) for 20-25 minutes, turning once halfway through. This marinade works great on veggies too – try adding bell peppers or zucchini to the skewers!
