- In a medium bowl, whisk together the honey, Dijon mustard, olive oil, lemon juice, minced garlic, salt, and pepper.
- Add the chicken pieces to the bowl, ensuring each piece is well-coated with the honey mustard marinade. Cover and refrigerate for at least 30 minutes to marinate.
- For best results, marinate for up to 2 hours.
- Preheat your grill to medium-high heat. If using wooden skewers, make sure they are soaked in water to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the preheated grill. Grill for 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- During the last few minutes of grilling, brush the skewers with any remaining marinade for extra flavor.
- Remove from the grill and let the skewers rest for a few minutes before serving.
- Garnish with fresh parsley or lemon wedges for extra zest. Enjoy!
Notes
These skewers are perfect as an appetizer or as a main dish served with a side salad or rice. You can also bake these in the oven if a grill is not available - bake at 400°F (200°C) for 20-25 minutes, turning once halfway through. This marinade works great on veggies too – try adding bell peppers or zucchini to the skewers!
