Honey Lime Grilled Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup honey
  • Juice of 2 limes
  • Zest of 1 lime
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method

  1. In a small bowl, whisk together honey, lime juice, lime zest, olive oil, minced garlic, chili powder, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated.
  3. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade and place on the grill. Discard any remaining marinade.
  6. Grill the chicken breasts for about 6-7 minutes on each side, or until fully cooked and nice grill marks appear. The internal temperature should reach 165°F (75°C).
  7. Remove the chicken from the grill and let rest for a few minutes before serving.
  8. Serve immediately and enjoy your sweet and tangy Honey Lime Grilled Chicken!

Notes

You can also cook the chicken in a grill pan or bake it in the oven at 375°F (190°C) for about 20-25 minutes. For an extra kick, add a pinch of red pepper flakes to the marinade. This chicken pairs perfectly with a side of cilantro-lime rice or a fresh avocado salad.
