Homemade Toffee Holiday Candy Recipe

This buttery, crunchy English toffee is seriously addictive and makes you look like a candy-making pro! The combination of buttery toffee, rich chocolate, and toasted almonds is absolutely irresistible. Fair warning: you might want to make a double batch because this stuff disappears fast, and you'll definitely want to keep some for yourself!

Ingredients
  

  • 1 cup unsalted butter 2 sticks
  • 1 cup granulated sugar
  • 3 tablespoons water
  • 1 tablespoon light corn syrup
  • ½ teaspoon vanilla extract
  • cups milk chocolate chips
  • 1 cup finely chopped toasted almonds divided

Method
 

  1. Line a 9x13-inch baking sheet with parchment paper and butter it lightly. Sprinkle half the chopped almonds evenly over the parchment.
  2. In a heavy-bottomed saucepan, combine butter, sugar, water, and corn syrup. Cook over medium heat, stirring constantly, until butter melts.
  3. Once mixture begins boiling, stop stirring and attach a candy thermometer to the pan. Continue cooking until temperature reaches 290°F (hard crack stage), about 12-15 minutes.
  4. Remove from heat immediately and stir in vanilla extract (it will bubble up).
  5. Quickly pour hot toffee over almonds on prepared baking sheet, spreading evenly with a buttered spatula.
  6. Let cool for 2-3 minutes, then sprinkle chocolate chips over hot toffee. Wait 2 minutes for chips to soften, then spread melted chocolate evenly over toffee.
  7. Sprinkle remaining almonds over chocolate and press gently. Refrigerate for 1 hour until completely set.
  8. Break into irregular pieces and store in an airtight container at room temperature for up to 2 weeks.
