Hoisin Duck Ramen

Duck hoisin glaze over noodles and duck broth.

Ingredients
  

  • 2 duck breasts
  • 3 tbsp hoisin sauce
  • 6 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp ginger grated
  • 12 oz ramen noodles
  • 2 stalks green onion sliced
  • 1 star anise

Method
 

  1. Score the duck skin and sear skin-side down until crisp and the fat renders, then flip and finish cooking.
  2. Brush the duck with hoisin sauce, then rest it before slicing.
  3. Simmer the broth with soy sauce, ginger, and star anise for 15 minutes, then remove the star anise.
  4. Cook the noodles separately and divide among bowls.
  5. Ladle the broth over the noodles and fan the sliced hoisin duck on top with green onion.

Notes

Start the duck skin-side down in a cold pan so the fat renders slowly and crisps up.
