Herbed Breaded Chicken Thighs

Boneless chicken thighs are coated in breadcrumbs mixed with herbs! They are crispy on the outside, and juicy on the inside!

Ingredients
  

  • 6 boneless skinless chicken thighs
  • 0.5 cup all-purpose flour
  • 2 eggs beaten
  • 1.5 cup breadcrumbs
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary crushed
  • 1 tsp garlic powder
  • 1 tsp salt
  • 3 tbsp olive oil

Method
 

  1. Mix the breadcrumbs with thyme, rosemary, garlic powder, and salt.
  2. Dredge each thigh in flour, then egg, then the herbed breadcrumbs.
  3. Heat the olive oil in an oven-safe skillet and brown the thighs 2 to 3 minutes per side.
  4. Transfer the skillet to a 400F oven and bake 15 to 18 minutes until cooked through.
  5. Rest a few minutes before serving.

Notes

Crush the dried rosemary between your fingers so you don't get sharp, woody bits.
