Herb-Roasted Chicken Legs

Chicken legs that have been roasted with garlic and fresh herbs until they are crispy and juicy.

Ingredients
  

  • 4 chicken legs skin on
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat the oven to 400 degrees F.
  2. Pat the chicken legs dry and rub all over with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Arrange them on a rack set over a baking sheet.
  4. Roast 35 to 40 minutes, until the skin is crisp and the juices run clear at 175 degrees F.
  5. Rest 5 minutes before serving.

Notes

Patting the skin dry first is the key to that crispy finish.
