Hearty Chicken Noodle to Warm Hearts

Ingredients
  

  • 2 tablespoons butter
  • 1 medium onion diced
  • 3 medium carrots peeled and sliced
  • 3 celery stalks sliced
  • 4 cloves garlic minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 pound boneless skinless chicken breasts
  • 3 cups egg noodles
  • 2 tablespoons fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Cook for 6-7 minutes until vegetables begin to soften.
  2. Add minced garlic and cook for 1 minute, stirring frequently.
  3. Pour in chicken broth and add bay leaves and thyme. Bring to a boil.
  4. Add chicken breasts to the pot. Reduce heat and simmer for 20 minutes until chicken is cooked through.
  5. Remove chicken from pot and shred with two forks. Set aside.
  6. Add egg noodles to the pot and cook for 8-10 minutes until tender.
  7. Return shredded chicken to the pot. Stir in fresh parsley and season with salt and pepper to taste.
  8. Remove bay leaves before serving. Ladle into bowls and enjoy immediately.
