Hearty Chicken and Wild Rice Soup

Wild rice and chicken in a rich and creamy broth.

Ingredients
  

  • 1.5 lb chicken breast
  • 1 cup wild rice blend
  • 6 cups chicken broth
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup half-and-half

Method
 

  1. Simmer the wild rice in the broth with the carrots and celery for 35 minutes until tender.
  2. Add the chicken breast and cook 15 minutes, then remove and shred it.
  3. In a small pan, melt the butter, whisk in the flour, then stir in the half-and-half to make a roux.
  4. Stir the creamy roux and shredded chicken into the soup.
  5. Simmer 5 minutes until thickened, then serve.

Notes

Wild rice blends cook faster than pure wild rice, so check the package timing.
