Hazelnut Crusted Salmon

Salmon fillets are flaky and have a crunchy toasted hazelnuts and Dijon crust.

Ingredients
  

  • 4 salmon fillets
  • 0.75 cup hazelnuts finely chopped
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400F and line a baking sheet with parchment.
  2. Pat the salmon dry and season with salt and pepper.
  3. Whisk the Dijon and honey together and brush over the salmon tops.
  4. Press the chopped hazelnuts firmly onto each fillet and drizzle with olive oil.
  5. Bake 12-15 minutes until the salmon flakes easily and the crust is golden.
  6. Serve right away with lemon wedges.
